Breakfast is without doubt my favourite meal of the day. I just delight in mornings a great deal, and I relish my routine and the vital energy mornings bring: slowly waking up with the familiar twitters of birds, opening the curtains and inviting the sun in as it drenches the bedroom with its brilliance, drinking my morning green tea outside in the sun while reading my novel, and going into the kitchen to create something nourishing and wholesome to break the fast.
My everyday breakfasts include oatmeal/porridge, overnight oats/chia seeds/buckwheat, greek yogurt with homemade granola, and banana pancakes – always topped with an abundance of seasonal fruit, chia seeds, nuts, seeds, dried fruit, cinnamon and nut butters.
Açaí is something I had read about and wanted to try, and so when I eventually bought some açaí powder from iHerb.com and it arrived on my door step, I was excited to try something new. The açaí bowl was the first thing I made with the powder and it’s a breakfast I’ve made several times since.
This breakfast is refreshing, light and energising, but I realise not everyone can (or, understandably, will want to) get their hands on this expensive superfood. So if that’s the case, just remove this ingredient and add something else you enjoy, because recipes are made to be altered to suit the cook and this smoothie bowl can be just as delicious without the açaí. I hope you enjoy this breakfast whichever way you choose to prepare it.
Makes 1 big bowl:
- 1 frozen banana
- 1 tbsp of açaí powder
- 1 1/2 cups of frozen berries (I love using blueberries and strawberries)
- 1/4 – 1/2 cup of almond milk (or coconut water, other nut milk)
- 1/2 tsp of cinnamon
- toppings of choice, including but not limited to: granola or muesli, sliced banana, apple, berries, shredded coconut, goji berries, chia seeds, buckwheat groats, dried fruit and nut butter.
Blend the first 5 ingredients in a high-powered blender until it forms a thick, ice-cream like consistency. If 1/4 cup of almond milk is not enough and the mixture is too thick, slowly add more. Transfer to a bowl and finish by adding your desired toppings. Then grab a spoon and dig in!
