Don’t you just love waffles?
There’s something so special and delicious about starting your day with waffles. Crispy on the outside, fluffy on the inside, topped with fruit, maple syrup and coconut yogurt — heaven.
These waffles are super simple to make and require very few ingredients that you probably already have in your pantry. They also happen to be gluten free, dairy free, egg free, sugar free and vegan — but they don’t taste like it. My housemate devoured his waffle with no idea that they were healthy, which is always a great thing! Healthy or vegan food doesn’t necessarily mean bland and boring, and these waffles are a perfect example.
The options are endless when it comes to topping your waffles. Here are just a few scrumptious flavour combinations:
- The classic — banana slices, berries and maple syrup
- PB + J — banana slices, a dollop of strawberry jam/chia jam, a dollop of natural peanut butter, and granola for some crunch
- Chocoholic — banana slices, strawberries, healthy nutella and/or chocolate sauce (mix together cacao powder, sweetener + coconut oil), and cacao nibs
- Berry Compote + Coyo — banana slices, mixed berry compote (simply heat frozen berries with a splash of water over a low heat), coconut yogurt and maple syrup

Healthy (and Easy!) Gluten Free + Vegan Waffles
1 cup oat flour (simply process rolled oats in food processor or blender)
1 tsp baking soda
1/4 tsp cinnamon
1 tsp chia seeds
3/4 cup plant-based milk
1 tsp apple cider vinegar
1 tsp vanilla extract
Make your ‘buttermilk’ by combining the milk and vinegar in a bowl.
While you leave the buttermilk to curdle, add the dry ingredients to a separate large mixing bowl and mix together.
Add the vanilla extract to the buttermilk and mix well.
Now add the wet mixture to the dry mixture, and stir until the batter is well incorporated.
Preheat your waffle iron and let the waffle batter rest while the iron preheats.
Cook the waffles according to your iron’s instructions and serve with your favourite toppings.
